Garlic Chicken with Kale

INGREDIENTS

  • 4 Boneless Skinless Chicken Breasts

  • 6 Garlic Cloves

  • 1 bunch Lacinato Kale

  • 2 bags UNCLE BEN'S® READY RICE® Whole Grain Brown

  • 1/4 cup Sesame Seed Oil

  • 2 Tbsp Honey

  • 2 Tbsp Soy Sauce

  • 1/2 cup Low Sodium Chicken Broth

  • 2 pinches Crushed Red Peppers

STEPS

  1. Cook Kale

    Prepare ingredients.

    Set pan to medium heat for 1 minute.

    Add oil, garlic & chili flakes. Cook, stirring, until fragrant, 1 minute.

    Add kale & toss to coat. Saute until wilted, 3-4 minutes.

  2. Cook Chicken

    Prepare ingredients. Set pan over high heat for 1 minute. Add 2 tsp sesame oil & chicken.

    Cook for 3 to 4 min per side or until chicken is browned & cooked through. Remove from pan.

    Reduce heat to medium; add garlic & cook until fragrant, 30 seconds. Add remaining ingredients; bring to a boil, allowing sauce to thicken, about 1 minute.

    Add chicken back in, coat with sauce.

  3. Heat Rice

    Gently squeeze the sides of the pouch to break apart the rice, and pour contents into a skillet.

    Add water, and heat on medium-high heat, stirring occasionally, for 2 minutes or until heated thoroughly.

  4. Serve & Enjoy

    Serve in a bowl over rice or mixed together, stir-fry style!
