Tzatziki Salmon with Zucchini and Couscous - Innit

    Preheat the oven to 425 F. Line sheet pan with foil.

  3. Tzatziki Creation

    Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in fridge.

    • 1/2 cup Plain Greek Yogurt
    • 1, juiced Lemon
    • 1 cup, small dice Persian Cucumber
    • 0.3 ounce, finely chopped Fresh Mint Leaf
    • 0.5 ounce, finely chopped Parsley
    • 2 cloves, minced Garlic Clove
    • 1/2 teaspoon Kosher Salt
    • 1 tablespoon Extra Virgin Olive Oil
  4. Prep Salmon

    Season salmon on sheet pan. Leave room for zucchini!

    • 1 1/2 pounds Salmon
    • 1 tablespoon Extra Virgin Olive Oil
    • 1 teaspoon Kosher Salt
  5. Cook Salmon & Zucchini

    Prepare ingredients. Season zucchini & add to sheet pan. Cook for 12 - 15 minutes.

    • 2, sliced into circles Zucchini
    • 0.5 ounce, leaves removed Thyme
    • 1 clove Garlic Clove
    • 1 tablespoon Extra Virgin Olive Oil
    • 1 teaspoon Kosher Salt
  6. CousCous Creation

    Boil water. Add whole thyme sprigs, garlic & couscous to water. Stir. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

    • 1 cup Couscous
    • 0.5 ounce Thyme
    • 2 cloves, smashed Garlic Clove
    • 1/2 teaspoon Kosher Salt
    • 1 1/4 cups Water
  7. Serve & Enjoy!

    Top salmon with Tzatziki. Serve with zucchini & couscous.
