Garlic Shrimp with Mushrooms and Quinoa - Innit

  • Vegetable Broth 1/2 cup

  • Ginger Root 5 teaspoons

  • Fresh Garden Thyme 2 sprigs

  • Fresh Persian Lime 1

  • Garlic Clove 5 cloves

  • Cremini Mushrooms 2 pounds

Spices

  • Kosher Salt 1/2 teaspoon

  • Red Pepper Flakes 1 pinch

Dry Goods

  • Red Quinoa 2/3 cup

Pantry

  • Sesame Seed Oil 3/8 cup

  • Toasted Unsalted White Sesame Seed 2 teaspoons

  • Soy Sauce 8 teaspoons

  • Water 1 1/3 cups

Preparation

  1. Flavor & Boil Quinoa

    Combine all ingredients in large pot & bring to a boil.

    • 1 clove, smashed Garlic Clove
    • 2 sprigs Fresh Garden Thyme
    • 1/2 teaspoon Kosher Salt
    • 2/3 cup Red Quinoa
    • 1 1/3 cups Water
  2. Cover & Simmer Quinoa

    Reduce heat & simmer, covered, for 15 minutes. Remove garlic & thyme. Fluff with a fork.

  3. Cook Shrimp

    Prepare ingredients. Set pan to medium heat for 1 minute. Add oil, garlic, ginger & red pepper flakes. Cook & stir until fragrant, about 30 seconds. Add shrimp. Raise heat to medium high & cook until shrimp are opaque, 2 to 3 minutes, stirring often. Add soy sauce & stir to coat. *Serve immediately.

    • 2 tablespoons Sesame Seed Oil
    • 6 cloves, minced Garlic Clove
    • 1 teaspoon, minced Ginger Root
    • 1 pinch Red Pepper Flakes
    • 1 pound, peeled and deveined Shrimp
    • 2 teaspoons Soy Sauce
  4. Saute Mushrooms

    Prepare ingredients. Set pan to high heat for 1 minute. Add oil & ginger Cook & stir until fragrant, about 30 seconds. Stir in mushrooms & soy sauce. Cook for 2-3 minutes. Add in broth & cook for 3-4 minutes. Stir in lime juice & sesame seeds.

    • 1/4 cup Sesame Seed Oil
    • 4 teaspoons, minced Ginger Root
    • 2 pounds, thinly sliced Cremini Mushrooms
    • 2 tablespoons Soy Sauce
    • 1/2 cup Vegetable Broth
    • 1, juiced Fresh Persian Lime
    • 2 teaspoons Toasted Unsalted White Sesame Seed
  5. Serve and Enjoy!
