Turmeric Yogurt Marinade Chicken with Kale Salad and Sweet Potatoes - Innit

Preparation

  2. Preheat

    Preheat the oven to 425 F. Line two sheet pans with foil.

  3. Season & Bake Chicken

    Season chicken. Cook, skin side up, for 30 - 35 minutes, let rest for 5 minutes.

    TIP: Why rest? Because proteins continue to cook once removed from the oven!

    • 4 Chicken Leg
    • 1 tablespoon Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1/4 teaspoon Black Pepper
  4. Bake Sweet Potatoes

    Arrange sliced sweet potatoes in an even layer to a sheet pan. Drizzle with olive oil. Season with remaining ingredients. Bake for 20 - 30 minutes.

    • 3, sliced into circles Sweet Potato
    • 2 teaspoons Light Brown Sugar
    • 1, juiced Orange
    • 2 tablespoons Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
  5. Salad Creation

    Prepare ingredients. Combine all of the ingredients in a medium bowl and mix well.

    • 6.0 ounces, chopped Kale
    • 6.4 ounces Red Grape
    • 1 tablespoon Sunflower Seeds
    • 2, thinly sliced into circles Persian Cucumber
    • 1/4 cup Sherry Vinegar
    • 1 tablespoon Extra Virgin Olive Oil
  6. Make Turmeric Yogurt Sauce

    Combine all of the ingredients in a small bowl & mix well.

    • 1/2 cup Plain Greek Yogurt
    • 1, juiced Lemon
    • 1 teaspoon Ground Turmeric
  7. Serve & Enjoy!

    Top chicken with Turmeric Yogurt Sauce. Serve with sweet potatoes and kale salad.
