Honey Mustard Ribs with Broccoli, Mac & Cheese - Innit

Ingredients

  • Baby Back Rib 1.1 kg

Dry Goods

  • Plain Flour 30 g

  • Macaroni 120 g

Pantry

  • Dijon Mustard 3 1/2 Tbsp

  • Olive Oil 2 1/2 Tbsp

  • Fresh Chives 1 Tbsp

  • Broccoli 2 heads

  • Shallot 1

  • Fresh Thyme 2 sprigs

  • Garlic Cloves 2

Canned/Bottled Goods

  • Honey 80 g

Dairy & Eggs

  • Whole Milk 240 ml

  • Plain Greek Yogurt 60 g

  • Heavy Cream 240 ml

  • Unsalted Butter 2 Tbsp

  • Muenster Cheese 110 g

Spices

  • Red Pepper Flakes 1 tsp

  • Salt 2 Tbsp

  • Black Pepper 1 3/8 tsp

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Flavour Creation

    Prepare ingredients. Heat pan over medium-high heat; add olive oil, shallot & thyme; sauté for 3 minutes. Add honey & mustard, cook for 2 minutes. Remove from heat & transfer to fridge to cool, for about 5 minutes.

    • 1/2 Tbsp Olive Oil
    • 80 g Honey
    • 3 1/2 Tbsp Dijon Mustard
    • 1, minced Shallot
    • 1 sprig Fresh Thyme
  3. Cook Ribs

    Season ribs on all sides. Cook for 45 minutes, bone side up.

    • 1/2 Tbsp Salt
    • 2 Tbsp Olive Oil
    • 1.1 kg Baby Back Rib
    • 1 pinch Black Pepper
  4. Cook Pasta

    Cook the macaroni in boiling salted water until al dente. Drain pasta & set aside.

    • 2 tsp Salt
    • 120 g Macaroni
    • 710 ml Water
  5. Flavour Creation Cont.

    Remove from fridge. Add ingredients. Whisk to combine. Remove thyme.

    • 1 pinch Black Pepper
    • 60 g Plain Greek Yogurt
    • 1 tsp Salt
    • 2 Tbsp Lemon Juice
  6. Start Mac & Cheese Sauce

    In a medium saucepan, melt butter over medium heat; add in flour & whisk until combined. Gradually add in milk & heavy cream & whisk until smooth. Add thyme & garlic. Stir constantly over low heat for 10 minutes, until thickened or coats the back of a spoon.

    • 30 g Plain Flour
    • 240 ml Whole Milk
    • 1 sprig Fresh Thyme
    • 2 Garlic Cloves
    • 2 Tbsp Unsalted Butter
    • 240 ml Heavy Cream
  7. Finish Mac & Cheese Sauce

    Turn off heat, remove garlic & thyme. Add cheese, salt, pepper, & chives. Fold in cooked macaroni.

    • 1 Tbsp, minced Fresh Chives
    • 1 pinch Black Pepper
    • 120 g Macaroni
    • 1/2 tsp Salt
    • 110 g, shredded Muenster Cheese
  8. Cook Broccoli

    Drizzle broccoli with olive oil. Season. Cook for 18 minutes.

    • 2 heads, large florets Broccoli
    • 1/2 tsp Red Pepper Flakes
    • tsp, to coat Olive Oil
    • 1/2 tsp Salt
    • 1 pinch Black Pepper
  9. Flip Ribs

    Remove baking tray from oven. Flip ribs bone-side down and continue to cook for 10 minutes. Remove from oven and let rest for 5 minutes.

    • 1.1 kg Baby Back Rib
