  • Boneless Skinless Chicken Breasts 4

Spices

  • Salt 1 tsp

  • Red Pepper Flakes 1/2 tsp

  • Black Pepper 1 pinch

Produce

  • Coriander 8 g

  • Lime 1

  • Cauliflower 1 head

Pantry

  • Olive Oil 4 Tbsp

  • Sunflower Seeds 2 Tbsp

Canned/Bottled Goods

  • Fish Sauce 1 tsp

  • Vegetable Stock 120 ml

Preparation

  1. Sear Chicken

    Set pan over high heat for 2 minutes. Add olive oil & sliced chicken. Cook for 6 minutes until golden brown, seasoning halfway through.

    • 4, sliced Boneless Skinless Chicken Breasts
    • 2 Tbsp Olive Oil
    • 1 tsp Salt
    • 1 pinch Black Pepper
  2. Chop Veggies

    Prepare ingredients. Set pan to high heat for 2 minutes. Add oil & cauliflower; cook for 3 minutes. Add stock, cover & cook for 3 minutes.

    • 1 head, chopped Cauliflower
    • 1, zested Lime
    • 2 Tbsp Olive Oil
    • 120 ml, or chicken stock Vegetable Stock
  3. Cook Cauliflower

    Add ingredients to pan with cauliflower. Garnish with torn coriander. Stir to combine.

    • 1 tsp Fish Sauce
    • 1, juiced, zested Lime
    • 1/2 tsp Red Pepper Flakes
    • 8 g, hand torn Coriander
    • 2 Tbsp Sunflower Seeds
  4. Combine Chicken and Cauliflower

    Give it a stir. Enjoy!
