Citrus Avocado Salad - Innit

Ingredients

  • Chives 1/4 cup

  • Arugula 1/2 cup

  • Orange 2

  • Radish 6

  • Avocado 2

Pantry

  • Pink Grapefruit 2

  • Extra Virgin Olive Oil 1/2 cup

Canned/Bottled Goods

  • Honey 2 tablespoons

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 2 teaspoons

Preparation

  1. Ingredient Prep

    Prepare ingredients & add to a large bowl. Reserve radishes & chives for garnish. Juice non-segmented part of orange & grapefruit into a small bowl. The juice will be used for the dressing!

    • 2, segmented, juiced Pink Grapefruit
    • 2, segmented, juiced Orange
    • 6, thinly sliced Radish
    • 1/4 cup, batons Chives
  2. Salad Assembly

    Add ingredients to slices of oranges & grapefruits.

    • 2, chunks Avocado
    • 1/2 cup Arugula
  3. Dressing Creation

    Combine wet ingredients & mix well. Pour over salad, toss to coat. Season with salt & pepper.

    • 2, segmented, juiced Pink Grapefruit
    • 2, segmented, juiced Orange
    • 1/2 cup Extra Virgin Olive Oil
    • 2 tablespoons Honey
    • 1 tablespoon Kosher Salt
    • 2 teaspoons, ground Black Pepper
  4. Serve and Enjoy!

    Plate in a bowl or on a platter and garnish with radish slices & chives. If desired, drizzle with extra virgin olive oil. Salt & pepper to taste!
