Cuban Mojo Shrimp with Cucumber-Jicama Salad and Sweet Potatoes - Innit

  • Light Brown Sugar 2 tsp

  • Extra Virgin Olive Oil 3/8 cup

  • White Wine Vinegar 2 Tbsp

Produce

  • Sweet Potatoes 3

  • Cilantro 1 bunch

  • Limes 3

  • Green Jalapeño Pepper 1

  • Oranges 2

  • Garlic Cloves 2

  • Persian Cucumber 1

  • Jicama 1/2

Spices

  • Chipotle Chili Powder 1/2 tsp

  • Kosher Salt 1 Tbsp

Preparation

  1. Bake Sweet Potatoes

    Arrange sliced sweet potatoes in an even layer to a sheet pan. Drizzle with olive oil. Season with remaining ingredients. Start to cook Sweet Potatoes on the middle oven rack.

    • 3, sliced into circles Sweet Potatoes
    • 2 tsp Light Brown Sugar
    • 1, juiced Orange
    • 2 Tbsp Extra Virgin Olive Oil
    • 1/2 tsp Kosher Salt
  2. Assemble Cucumber Jicama Salad

    Prepare ingredients. Combine in a medium bowl. Mix well.

    • 1, sliced into circles Persian Cucumber
    • 1/2, 1/4" sticks Jicama
    • 1/2 tsp Chipotle Chili Powder
    • 2 tsp Extra Virgin Olive Oil
    • 1 tsp Kosher Salt
    • 1, juiced Lime
  3. Prep & Cook Shrimp

    Season shrimp on a sheet pan. Once the sweet potatoes' first cook sequence is up, add the shrimp to the oven's top rack and start the next cook sequence, cooking both the potatoes & shrimp.

    • 1 lb Shrimp
    • 1 tsp Extra Virgin Olive Oil
    • 1 tsp Kosher Salt
  4. Cuban Mojo Sauce Creation

    Add ingredients to a blender. Blend until smooth.

    • 2 Garlic Cloves
    • 1 Green Jalapeño Pepper
    • 1 bunch Cilantro
    • 2, zested and juiced Limes
    • 2 Tbsp White Wine Vinegar
    • 1/2 tsp Kosher Salt
    • 2 tsp Extra Virgin Olive Oil
    • 1, zested and juiced Orange
  5. Serve & Enjoy!

    Combine shrimp with Mojo Sauce. Serve with salad & sweet potatoes.
