  • Parsley 30 g

  • Extra Virgin Olive Oil 1 1/2 Tbsp

  • Black Pepper 1 pinch

  • Brown Quinoa 165 g

Spices

  • Salt 1 tsp

Preparation

  1. Cook Quinoa

    Bring ingredients to a boil. Reduce heat, cover and simmer for 15 minutes. Remove from heat & let stand 5 minutes. Remove from pot & cool.

    • 165 g Brown Quinoa
    • 350 ml Water
    • 1/2 tsp Salt
  2. Ingredient Prep

    Cut the cucumber, tomato and parsley.

    • 180 g , diced Fresh Red Tomato
    • 100 g , diced Cucumber
    • 30 g , chopped Parsley
  3. Salad Assembly

    Combine all salad ingredients in a large bowl. Mix well.

    • 165 g Brown Quinoa
    • 1/2 tsp Salt
    • 180 g , diced Fresh Red Tomato
    • 100 g , diced Cucumber
    • 30 g , chopped Parsley
    • 1/2 , zested & juiced Lemon
    • 1 1/2 Tbsp Extra Virgin Olive Oil
    • 1 pinch Black Pepper
  4. Taste

    Plate in bowl or on a platter. Garnish with parsley leaves.
