Asian Turkey with Edamame and Coconut Rice - Innit

Ingredients

Meat & Seafood

  • Turkey Mince 450 g

Canned/Bottled Goods

  • Tinned Coconut Milk 1 can

  • Fresh Water Chestnut 2 cans

Produce

  • Fresh Edamame 310 g

  • White Onion 1

  • Ginger Root 4 tsp

  • Fresh Persian Limes 2

  • Garlic Cloves 6

Spices

  • Salt 1 tsp

Dry Goods

  • Basmati Rice 180 g

Pantry

  • Water 180 ml

  • Soy Sauce 4 Tbsp

  • Sesame Seed Oil 8 tsp

Preparation

  1. Cook Coconut Rice

    Combine coconut milk, water & salt in a small pot. Bring to a boil. Add rice & reduce heat. Simmer covered for 20 minutes or until liquid has absorbed. Let stand for 10 minutes. Fluff rice with a fork. Salt to taste.

    • 1 can Tinned Coconut Milk
    • 180 ml Water
    • 1 tsp Salt
    • 180 g, uncooked Basmati Rice
  2. Cook Edamame

    Set pan over medium heat for 1 minute. Add oil and garlic. Cook, stirring, until fragrant, 30 seconds. Add in edamame and cook until heated through, 1-2 minutes. Season to taste.

    • 2 tsp Sesame Seed Oil
    • 2 Garlic Cloves
    • 310 g Fresh Edamame
    • g, to taste Salt
    • g, to taste Black Pepper
  3. Cook Turkey

    Prepare ingredients. Set a pan to medium high heat for 1 minute. Add oil & onion. Cook until softened, about 3 minutes. Add garlic, ginger and water chestnuts, cook for 1 minute more. Add ground turkey. Cook for 4-5 minutes or until golden brown. Stir in soy sauce & lime juice. Remove from heat.

    • 2 Tbsp Sesame Seed Oil
    • 1, diced White Onion
    • 4 Garlic Cloves
    • 4 tsp, minced Ginger Root
    • 2 cans, finely chopped Fresh Water Chestnut
    • 450 g Turkey Mince
    • 4 Tbsp Soy Sauce
    • 2 Fresh Persian Limes
  4. Serve and Enjoy!
