  • Mayonnaise 60 ml

  • Precooked Beetroots 450 g

  • Parsley 3 Tbsp

  • Chives 1 Tbsp

  • Broccoli 180 g

  • Salad Mix 140 g

  • Lemon 1/2

Spices

  • Ground Garlic Powder 1/4 tsp

  • Salt 2 1/4 tsp

  • Black Pepper 2 pinches

Dairy & Eggs

  • Buttermilk 2 Tbsp

  • Sour Cream 60 ml

Pantry

  • Olive Oil 71 ml

  • Sunflower Seeds 140 g

Preparation

  1. Preheat

    Preheat the oven to 220C.

    Connect Oven
  2. Whisk Together Dressing

    Add all ingredients to a small bowl. Whisk to combine.

    • 1 Tbsp, finely chopped Parsley
    • 1 Tbsp, finely chopped Chives
    • 60 ml Mayonnaise
    • 60 ml Sour Cream
    • 2 Tbsp Buttermilk
    • 1/2, zested + juiced Lemon
    • 1/2 Tbsp Olive Oil
    • 1/4 tsp Salt
    • 1 pinch Black Pepper
    • 1/4 tsp Ground Garlic Powder
  3. Roast Broccoli

    Toss broccoli with oil & salt. Roast for 22 minutes.

    • 180 g, small florets Broccoli
    • 2 Tbsp Olive Oil
    • 1 tsp Salt
  4. Sear Chicken

    Set pan over high heat for 2 minutes. Add olive oil & sliced chicken. Cook for 6 minutes until golden brown, seasoning halfway through.

    • 4, sliced Boneless Skinless Chicken Breasts
    • 2 Tbsp Olive Oil
    • 1 tsp Salt
    • 1 pinch Black Pepper
  5. Flavour Beetroots

    Toss beetroots in oil. Season with salt, pepper & parsley.

    • 450 g, quartered Precooked Beetroots
    • 2 Tbsp, finely chopped Parsley
    • 1 Tbsp Olive Oil
    • 1 pinch Salt
    • 1 pinch Black Pepper
  6. Toast Sunflower Seeds

    Combine ingredients. Toast in oven for 5 - 7 min or until golden brown.

    TIP: Place on same baking tray as broccoli for easier clean up!

    • 140 g Sunflower Seeds
    • 1 tsp Olive Oil
    • 1 pinch Salt
  7. Mixed Greens

    Wash greens & dry.

    • 140 g Salad Mix
  8. Serve and Enjoy!
