Quinoa Salad - Innit

Ingredients

Produce

  • Parsley 30 grams

  • Lemon 1

  • Cucumber 100 grams

  • Red Tomato 180 grams

Pantry

  • Extra Virgin Olive Oil 120 milliliters

Dry Goods

  • Red Quinoa 110 grams

Spices

  • Salt 5 teaspoons

  • Black Pepper 2 teaspoons

Preparation

  1. Cook Quinoa

    Bring ingredients to a boil. Simmer for 15 minutes. Remove from heat & let stand 5 minutes. Remove from pot & cool.

    • 110 grams Red Quinoa
    • 470 milliliters Water
    • 2 teaspoons Salt
  2. Ingredient Prep

    Bring quinoa, water and salt to a boil, simmer for 15 minutes and then turn off and let stand 5 minutes. Take out of pot and cool. Cut the cucumber, tomato and parsley. Mix everything together. Plate in bowl or on a platter, garnish with parsley leaves.

    • 180 grams, diced Red Tomato
    • 100 grams, diced Cucumber
    • 30 grams, chopped Parsley
  3. Salad Assembly

    Combine ingredients in a large bowl. Mix well.

    • 110 grams Red Quinoa
    • 1 tablespoon Salt
    • 180 grams, diced Red Tomato
    • 100 grams, diced Cucumber
    • 30 grams, chopped Parsley
    • 1, zested & juiced Lemon
    • 120 milliliters Extra Virgin Olive Oil
    • 2 teaspoons, ground Black Pepper
  4. Taste

    Plate in bowl or on a platter. Garnish with parsley leaves.
