Preparation

  1. Ingredient Prep

    Prepare ingredients. Set aside some coriander for garnish.

    • 1, diced Fresh Ruby Mango
    • 8 g, chopped Coriander
    • 60 g, sliced Red Onion
    • 90 g, wedged Fresh Red Tomato
  2. Combine and Mix

    Combine salad ingredients in a large bowl. Mix well.

    • 2 cans, drained Tinned Black Beans
    • 1, diced Fresh Ruby Mango
    • 8 g, chopped Coriander
    • 60 g, sliced Red Onion
    • 90 g, wedged Fresh Red Tomato
    • 2 Tbsp Lime Juice
    • 1 Tbsp Salt
    • 1 tsp Ground Cumin
    • 60 ml Extra Virgin Olive Oil
  3. Taste

    Plate in platter or bowl. Garnish with cotija & coriander.

    • 120 g, crumbled Cotija Cheese
    • 4 Tbsp, leaves only, hand-torn Coriander
