Sesame Ginger Salmon & Garlic Kale with Cauliflower Rice (Keto Friendly) - Innit

  • Wild Atlantic Salmon 1 1/4 lb

Pantry

  • Sesame Seed Oil 7/12 cup

  • Toasted Unsalted White Sesame Seed 2 tsp

  • Soy Sauce 4 tsp

  • Olive Oil 1/4 cup

Produce

  • Fresh Ginger 2 tsp

  • Fresh Thyme 2 sprigs

  • Scallions 4

  • Cauliflower 1 head

  • Garlic Cloves 6

  • Lacinato Kale 1 bunch

Spices

  • Kosher Salt 1/2 tsp

  • Black Pepper 1 pinch

  • Red Pepper Flakes 1 pinch

Preparation

  1. Cauliflower Rice Creation

    Prepare ingredients. Add cauliflower to a food processor. Chop/Pulse until it resembles rice. Set pan to high heat for 2 minutes. Add oil, cauliflower rice, salt, pepper, thyme & garlic. Stir & cook for 4 minutes. Discard garlic & thyme.

    • 1 head, chopped Cauliflower
    • 2, peeled Garlic Cloves
    • 1/4 cup Olive Oil
    • 2 sprigs Fresh Thyme
    • 1/2 tsp Kosher Salt
    • 1 pinch Black Pepper
  2. Cook Kale

    Prepare ingredients. Set pan to medium heat for 1 minute. Add oil, garlic & chili flakes. Cook, stirring, until fragrant, 1 minute. Add kale & toss to coat. Saute until wilted, 3-4 minutes.

    • 1/4 cup Sesame Seed Oil
    • 6, minced Garlic Cloves
    • 1 pinch Red Pepper Flakes
    • 1 bunch, stems removed, hand torn Lacinato Kale
    • tsp, to taste Kosher Salt
    • tsp, to taste Black Pepper
  3. Cook Salmon

    Prepare ingredients. Set pan to high heat for 1 minute. Add (half) oil & salmon. Cook for 3-4 minutes or until golden brown. Remove from pan. Add remaining oil, garlic, ginger & green onions to pan. Cook & stir until fragrant, about 30 seconds. Add soy sauce & sesame seeds. Add salmon back to pan. Gently toss to coat with sauce.

    • 1/3 cup Sesame Seed Oil
    • 4 fillets, diced Wild Atlantic Salmon
    • 2, minced Garlic Cloves
    • 2 tsp, minced Fresh Ginger
    • 4, thinly sliced Scallions
    • 4 tsp Soy Sauce
    • 2 tsp Toasted Unsalted White Sesame Seed
  4. Serve and Enjoy!
