Preparation

  1. Ingredient Prep

    Prepare ingredients.

    • 2 cans , halved Canned Globe Artichoke Hearts
    • 1 cup , shaved Fennel Bulb
    • 8 , small dice Anchovy Fillets
    • 1/4 cup , chopped Fresh Chives
    • 1/4 cup , chopped Italian Parsley
    • 2 cups , diced, crust off Sourdough Bread
  2. Crouton Creation

    In a saute pan, slowly heat up the oil, garlic & thyme. Add in bread & salt. Cook on low heat until golden brown. Remove from pan & place on paper towels to dry.

    • 1/4 cup Extra Virgin Olive Oil
    • 2 cups , diced, crust off Sourdough Bread
    • 1 tsp Kosher Salt
    • 4 sprigs , or more Fresh Thyme
    • 5 , smashed Garlic Cloves
  3. Create Sour Cream Dressing

    Combine ingredients & stir. Save some parsley for garnish!

    • 8 , small dice Anchovy Fillets
    • 1/4 cup Full Fat Mayonnaise
    • 1/4 cup Sour Cream
    • 1/4 cup , chopped Italian Parsley
  4. Flavor Artichokes

    Combine ingredients & mix gently.

    • 2 cans , halved Canned Globe Artichoke Hearts
    • 1 cup , shaved Fennel Bulb
    • 1 , zested & juiced Lemon
    • 1 Tbsp Extra Virgin Olive Oil
    • 1/2 tsp Kosher Salt
    • 1 pinch Black Pepper
  5. Serve

    Layer serving dish with sour cream dressing, fennel artichoke salad, then homemade croutons. Garnish with chives & parsley. Enjoy!
