Tofu with Red Bell Pepper, Yellow Onion & Brown Rice - Innit

Ingredients

Produce

  • Red Bell Peppers 2

  • Yellow Onion 1

  • Fresh Thyme 2/3 bunch

  • Garlic Cloves 4

Spices

  • Salt 3 1/2 tsp

  • Black Pepper 3 pinches

Packaged Products

  • Extra Firm Tofu 2 packages

Pantry

  • Water 310 ml

  • Olive Oil 3 Tbsp

Dry Goods

  • Long Grain Brown Rice 120 g

Preparation

  1. Boil Water

    Combine all ingredients in a large pot and bring to boil.

    • 1/2 tsp Salt
    • 310 ml Water
    • 1 pinch Black Pepper
    • 1/2 bunch Fresh Thyme
    • 2 Garlic Cloves
  2. Cover & Simmer Rice

    Add rice & reduce heat. Simmer, covered, for 40 minutes. Let rest for 10 minutes. Remove garlic & thyme. Fluff rice with a fork.

    • 120 g Long Grain Brown Rice
  3. Preheat

    Preheat the oven to 220C.

    Connect Oven
  4. Cook Tofu

    Drain tofu and pat dry. Season. Cook for 22 - 28 minutes.

    • 1 pinch Black Pepper
    • 2 packages, halved Extra Firm Tofu
    • 1 1/2 Tbsp Olive Oil
    • 1 tsp Salt
  5. Cook Peppers & Onions

    Toss peppers, onion, garlic & thyme together. Drizzle with olive oil & season. Cook for 13 minutes.

    • 2 Red Bell Peppers
    • 1, sliced Yellow Onion
    • 1 pinch Black Pepper
    • 1 Tbsp Olive Oil
    • 2 Garlic Cloves
    • 1 tsp Salt
    • 4 sprigs Fresh Thyme
  6. Serve & Enjoy!
