Preparation

  1. Ingredient Prep

    Preheat oven to 205 C. Prepare cauliflower on a baking tray with oil & salt. Roast for 10 minutes. Prepare ingredients. Reserve a small quantity of spring onion, red pepper & coriander for garnish!

    • 1 head, small florets Cauliflower
    • 2 Tbsp Extra Virgin Olive Oil
    • 1 tsp Salt
    • 25 g, sliced Spring Onion
    • 80 g, sliced Red Grapes
    • 4 g, chopped Coriander
    • 1, sliced Red/Green Chilli
  2. Salad Assembly

    Combine mayo, sour cream & curry powder in a large bowl, mix well. Add remaining ingredients to sour cream mixture.

    • 1 head, small florets Cauliflower
    • 60 ml Sour Cream
    • 60 ml Mayonnaise
    • 1 Tbsp Curry Powder
    • 25 g, sliced Spring Onion
    • 80 g, sliced Red Grapes
    • 4 g, chopped Coriander
    • 1 Tbsp Lemon Juice
    • 1, sliced Red/Green Chilli
    • 25 g Flaked Almond
  3. Taste

    Plate the salad in a bowl or platter. Garnish with coriander, chillis & scallions. Season with black pepper.
