  • Panko Breadcrumbs 1 1/4 cups

Spices

  • Kosher Salt 1/2 tsp

  • Za'atar 1 Tbsp

Preparation

  1. Prep Ingredients

    Slice eggplant into 1/4-1/2 inch fries, then drizzle with olive oil. Toss to coat. Add dry ingredients to a large bowl & mix well. Combine eggplant & panko mixture coating all sides.

    • 1 , halved Globe Eggplant
    • 3 Tbsp Olive Oil
    • 1/2 tsp Kosher Salt
    • 1 1/4 cups Panko Breadcrumbs
    • 1 Tbsp Za'atar
  2. Airfry

    Cook at 400 F for 14 minutes stirring the basket halfway through. Sprinkle with salt to taste. Tip: For best results, work in 2 batches. The 2nd batch may cook quicker than the 1st since the Philips Airfryer is preheated!
