Kiwi Melon Salad - Innit

  • Fresh Mint Leaf 1/2 cup

  • Blueberry 1 cup

  • English Cucumber 1 cup

  • Sourdough Bread 2 cups

  • Kosher Salt 2 teaspoons

Pantry

  • Canola Oil 2 tablespoons

  • Extra Virgin Olive Oil 1/2 cup

Preparation

  1. Ingredient Prep

    Preheat oven to 350 F. Prepare ingredients & combine fruit in a large bowl. Toss diced bread in canola oil & salt. Toast in oven for 7 minutes.

    • 3, sliced Kiwifruit
    • 1, sliced Cantaloupe
    • 1 cup, sliced bias English Cucumber
    • 1 cup Blueberry
    • 2 cups, crust removed, diced Sourdough Bread
    • 2 tablespoons Canola Oil
  2. Salad Assembly

    Season fruit salad. Mix well.

    • 1/2 cup Fresh Mint Leaf
    • 2 teaspoons Kosher Salt
    • 1/2 cup Extra Virgin Olive Oil
    • 1, zested & juiced Lemon
  3. Taste

    Plate on platter or bowl. Garnish with homemade croutons & mint!
