Poached Salmon Salad - Innit

Ingredients

  • Salmon Fillet 1 lb

Canned/Bottled Goods

  • Pickled Caper 1/4 cup

Produce

  • Lemons 2

  • Dill 2 Tbsp

  • Lemon Peel 1

  • Red Onion 1/2 cup

  • Cucumber 1/2 cup

Spices

  • Kosher Salt 1 Tbsp

Dairy & Eggs

  • Plain Yogurt 1/2 cup

Pantry

  • Extra Virgin Olive Oil 1/4 cup

Preparation

  1. Poach Salmon

    Bring water & salt to a simmer. Add salmon & lemon peels. Simmer for 5 minutes.

    • 1 lb, skinned, deboned Salmon Fillet
    • 4 cups Water
    • 1 tsp Kosher Salt
    • 1 Lemon Peel
  2. Ingredient Prep

    Prepare ingredients. Reserve some dill & all lemon wedges for garnish!

    • 1/2 cup, julienned Red Onion
    • 1/2 cup, sliced, bias Cucumber
    • 2 Tbsp, roughly chopped Dill
    • 1, wedged Lemon
  3. Salad Assembly

    Flake salmon and add to a large bowl. Add ingredients and combine well.

    • 1 lb, skinned, deboned Salmon Fillet
    • 2 tsp Kosher Salt
    • 1/4 cup Pickled Caper
    • 1/2 cup, julienned Red Onion
    • 1/2 cup, sliced, bias Cucumber
    • 1, zested & juiced Lemon
    • 1/4 cup Extra Virgin Olive Oil
  4. Dressing Creation

    Combine ingredients in a medium bowl. Mix well.

    • 1/2 cup Plain Yogurt
    • 1 Tbsp, roughly chopped Dill
  5. Taste

    Spread yogurt mixture on a platter or plate. Place salmon salad on top of yogurt mixture. Garnish with dill & lemon wedges. Drizzle with extra virgin olive oil, if desired!
