  • Fresh Thyme 0.7 oz

  • Garlic Cloves 3

  • Persian Cucumber 1

  • Italian Parsley 1/3 cup

  • Mint 1/4 cup

  • Kosher Salt 1 Tbsp

  • Plain Greek Yogurt 1/2 cup

Pantry

  • Extra Virgin Olive Oil 7 tsp

Preparation

  1. Prep Salmon

    Season salmon on sheet pan. Leave room for zucchini!

    • 1 1/2 lb Wild Atlantic Salmon
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Kosher Salt
  2. Cook Salmon & Zucchini

    Prepare ingredients. Season zucchini & add to sheet pan. Place on top oven rack.

    • 2, sliced into circles Zucchini
    • 0.5 oz, leaves removed Fresh Thyme
    • 1, minced Garlic Clove
    • 1 Tbsp Extra Virgin Olive Oil
    • 1 tsp Kosher Salt
  3. Tzatziki Creation

    Prepare ingredients. Combine all ingredients in a medium bowl. Mix well. Set aside in fridge.

    • 1/2 cup Plain Greek Yogurt
    • 1, juiced Lemon
    • 1 cup, small dice Persian Cucumber
    • 1/4 cup, finely chopped Mint
    • 1/3 cup, finely chopped Italian Parsley
    • 1, minced Garlic Clove
    • 1/2 tsp Kosher Salt
    • 1 Tbsp Extra Virgin Olive Oil
  4. Couscous Creation

    Add water, thyme sprigs, garlic, and salt into a pot. Bring to a boil and add stir in couscous. Turn off heat & cover. Let steam for 5 minutes. Remove thyme & garlic. Season with olive oil & salt. Fluff with a fork.

    • 1 cup Couscous
    • 1/2 bunch Fresh Thyme
    • 1, peeled Garlic Clove
    • 1/2 tsp Kosher Salt
    • 1 1/4 cups Water
  5. Serve & Enjoy!

    Top salmon with Tzatziki. Serve with zucchini & couscous.
