Mandarin Chicken Salad - Innit

Ingredients

  • Boneless Skinless Chicken Breast 2

Spices

  • Kosher Salt 1 tablespoon

  • Black Pepper 1 teaspoon

  • Sambal 1 tablespoon

Produce

  • Ginger 2 tablespoons

  • King Mandarin 4

  • Scallion 1/2 cup

  • Orange Juice 1/4 cup

  • Garlic Clove 3 cloves

  • Napa Cabbage 2 1/2 cups

Pantry

  • Dry Roasted Unsalted Cashew 1 cup

  • Sugar 2 tablespoons

  • Soy Sauce 1/2 cup

Canned/Bottled Goods

  • Rice Wine Vinegar 3/8 cup

Preparation

  1. Prep & Cook Chicken

    Preheat oven to 350 F. Butterfly & season chicken. Place on roasting rack & cook for 15 minutes (or until 165 degrees).

    • 2 Boneless Skinless Chicken Breast
    • 1 tablespoon Kosher Salt
    • 1 teaspoon, ground Black Pepper
  2. Prepare Salad

    Prepare ingredients.

    • 2 1/2 cups, shredded Napa Cabbage
    • 4, peeled and seperated King Mandarin
    • 1/2 cup, sliced Scallion
  3. Dressing Creation

    Place all ingredients into a blender. Blend.

    • 1/2 cup Soy Sauce
    • 2 cloves Garlic Clove
    • 3/8 cup Rice Wine Vinegar
    • 1/4 cup Orange Juice
    • 2 tablespoons Sugar
    • 2 tablespoons, peeled, roughly chopped Ginger
    • 1 tablespoon Sambal
  4. Salad Assembly

    Combine ingredients & dressing in a large bowl. Toss to coat.

    • 2 Boneless Skinless Chicken Breast
    • 2 1/2 cups, shredded Napa Cabbage
    • 4, peeled and seperated King Mandarin
  5. Taste

    Plate on a platter or bowl. Garnish with green onions & cashews. Enjoy!

    • 1 cup, roasted Dry Roasted Unsalted Cashew
    • 1/2 cup, sliced Scallion
