Pasta Salad - Innit

Ingredients

Produce

  • Red Bell Pepper 1/2 cup

  • Fresh Oregano 1/4 cup

  • Spinach 2 cups

  • Cherry Tomatoes 1/2 cup

Canned/Bottled Goods

  • Kalamata Olive 1/2 cup

Dairy & Eggs

  • Feta Cheese 1/2 cup

Spices

  • Black Peppercorn 1 tablespoon

  • Red Wine Vinegar 1/4 cup

  • Kosher Salt 3 1/2 tablespoons

Dry Goods

  • Fusilli 3 cups

Pantry

  • Extra Virgin Olive Oil 1/2 cup

Preparation

  1. Boil Pasta

    Bring water & salt to a boil. Cook pasta until al dente, about 8 minutes. Strain and cool.

    • 3 cups, dried Fusilli
    • 12 cups Water
    • 2 tablespoons Kosher Salt
  2. Ingredient Prep

    Prepare ingredients & add to a large bowl.

    • 1/2 cup, chopped Kalamata Olive
    • 1/2 cup, diced Red Bell Pepper
    • 1/2 cup, halved Cherry Tomatoes
  3. Salad Assembly

    Combine cooked pasta with chopped vegetables. Mix in additional ingredients. Toss well.

    • 1 1/2 tablespoons Kosher Salt
    • 1/2 cup, crumbled Feta Cheese
    • 2 cups Spinach
    • 1/4 cup Fresh Oregano
    • 1/2 cup Extra Virgin Olive Oil
    • 1/4 cup Red Wine Vinegar
    • 1 tablespoon, cracked Black Peppercorn
  4. Taste

    Plate pasta salad in a bowl or platter. Garnish with fresh oregano & extra virgin olive oil if desired!
