Classic Veggie Burger with Fried Egg - Innit

Ingredients

  • Shallot 1

  • Carrot 60 grams

  • Garlic Clove 2 cloves

  • Tinned Black Beans 1 can

  • Burger Bun 4

Spices

  • Ground Coriander Seed 1/2 teaspoon

  • Salt 2 1/4 teaspoons

  • Black Pepper 1 pinch

Dry Goods

  • Instant Mashed Potatoes 62 grams

Pantry

  • Olive Oil 1 tablespoon

Preparation

  1. Form Burgers

    Mash all of the black beans into a paste-like consistency. Grate the carrots, garlic and shallot together. Mix everything together well and portion into 4 equal sized burgers.

    • 1 can, 15 oz Tinned Black Beans
    • 60 grams, grated Carrot
    • 2 cloves, grated Garlic Clove
    • 1, grated Shallot
    • 2 teaspoons Salt
    • 62 grams Instant Mashed Potatoes
    • 1/2 teaspoon Ground Coriander Seed
  2. Prep Topping

    In a non stick pan, heat up oil on medium heat. Crack the egg into the pan and fry for about 5 minutes until the whites around the yolk start to set. Lower the heat if its browning too fast on the sides.

    • 4 Eggs
    • 1 tablespoon Olive Oil
    • 1/4 teaspoon Salt
    • 1 pinch Black Pepper
  3. Cook Burgers

    Preheat pan to medium-low heat. Add oil and cook your burgers for 5 minutes on each side.

    • 1 tablespoon Olive Oil
    • 4, toasted Burger Bun
  4. Serve and Enjoy!

    Pair with your favorite side!
