Brussels Sprouts Salad - Innit

Ingredients

  • Cilantro 8 grams

  • Brussels Sprout 350 grams

  • Fish Sauce 2 tablespoons

  • Rice Wine Vinegar 59 milliliters

  • Wonton Chips 20 grams

Spices

  • Sambal 2 teaspoons

  • Salt 5 1/2 teaspoons

Dry Goods

  • Dry Roasted Peanut 70 grams

Pantry

  • Extra Virgin Olive Oil 2 tablespoons

  • Soy Sauce 89 milliliters

  • Sugar 200 grams

Preparation

  1. Cook Brussels Sprouts

    Preheat oven to 205 C. Prepare brussels sprouts & place on a baking tray. Drizzle with olive oil, salt & pepper, cook for 10 minutes at 205 C.

    • 350 grams, halved Brussels Sprout
    • 2 tablespoons Extra Virgin Olive Oil
    • 1 1/2 tablespoons Salt
    • 1 pinch, ground Black Pepper
  2. Flavour Creation

    Heat sugar & water in a pan until a light golden brown. Turn off heat. Add remaining ingredients. Turn heat back on and simmer for 2 minutes then cool.

    • 1 teaspoon Salt
    • 200 grams Sugar
    • 120 milliliters Water
    • 89 milliliters Soy Sauce
    • 59 milliliters Rice Wine Vinegar
    • 2 tablespoons Fish Sauce
    • 2 teaspoons Sambal
  3. Combine

    Combine soy sauce mixture, cooked brussels sprouts & peanuts. Mix well.

    • 350 grams, halved Brussels Sprout
    • 70 grams, roasted Dry Roasted Peanut
  4. Taste

    Plate in bowl or on platter and garnish with peanuts, cilantro & wonton chips.
