Brussels Sprouts Salad - Innit

Ingredients

  • Fresh Cilantro 8 g

  • Fresh Brussel Sprouts 350 g

Canned/Bottled Goods

  • Fish Sauce 2 Tbsp

  • Rice Wine Vinegar 59 mL

Packaged Products

  • Wonton Chips 20 g

Spices

  • Sambal 2 tsp

  • Salt 5 1/2 tsp

Dry Goods

  • Peanuts 70 g

Pantry

  • Extra Virgin Olive Oil 2 Tbsp

  • Soy Sauce 89 mL

  • Granulated Sugar 200 g

Preparation

  1. Cook Brussels Sprouts

    Preheat oven to 205 C. Prepare brussels sprouts & place on a baking tray. Drizzle with olive oil, salt & pepper, cook for 10 minutes at 205 C.

    • 350 g, halved Fresh Brussel Sprouts
    • 2 Tbsp Extra Virgin Olive Oil
    • 1 1/2 Tbsp Salt
    • 1 pinch, ground Black Pepper
  2. Flavour Creation

    Heat sugar & water in a pan until a light golden brown. Turn off heat. Add remaining ingredients. Turn heat back on and simmer for 2 minutes then cool.

    • 1 tsp Salt
    • 200 g Granulated Sugar
    • 120 mL Tap Water
    • 89 mL Soy Sauce
    • 59 mL Rice Wine Vinegar
    • 2 Tbsp Fish Sauce
    • 2 tsp Sambal
  3. Combine

    Combine soy sauce mixture, cooked brussels sprouts & peanuts. Mix well.

    • 350 g, halved Fresh Brussel Sprouts
    • 70 g, roasted Peanuts
  4. Taste

    Plate in bowl or on platter and garnish with peanuts, cilantro & wonton chips.
