  • Lemon 1/2

  • Italian Parsley 1/2 cup

  • Red Tomato 1 cup

  • Cucumber 1 cup

Pantry

  • Extra Virgin Olive Oil 1 1/2 Tbsp

Dry Goods

  • Brown Quinoa 1 cup

Spices

  • Kosher Salt 1 tsp

  • Black Pepper 1 pinch

Preparation

  1. Cook Quinoa

    Bring ingredients to a boil. Reduce heat, cover and simmer for 15 minutes. Remove from heat & let stand 5 minutes. Remove from pot & cool.

    • 1 cup Brown Quinoa
    • 1 1/2 cups Water
    • 1/2 tsp Kosher Salt
  2. Ingredient Prep

    Cut the cucumber, tomato and parsley.

    • 1 cup, diced Red Tomato
    • 1 cup, diced Cucumber
    • 1/2 cup, chopped Italian Parsley
  3. Salad Assembly

    Combine all salad ingredients in a large bowl. Mix well.

    • 1 cup Brown Quinoa
    • 1/2 tsp Kosher Salt
    • 1 cup, diced Red Tomato
    • 1 cup, diced Cucumber
    • 1/2 cup, chopped Italian Parsley
    • 1/2, zested & juiced Lemon
    • 1 1/2 Tbsp Extra Virgin Olive Oil
    • 1 pinch Black Pepper
  4. Taste

    Plate in bowl or on a platter. Garnish with parsley leaves.
