  • Beef Tri-Tip Roast 2 1/4 lb

  • Onion Maple Confit 1/2 lb

  • Fresh Thyme 1/4 bunch

  • Fresh Horseradish 2 Tbsp

  • Garlic Cloves 6

  • Baby Yukon Gold Potato 1 1/2 lb

  • Fresh Green Beans 1 lb

Spices

  • Kosher Salt 4 tsp

  • Black Pepper 2 pinches

Dairy & Eggs

  • Unsalted Butter 1 Tbsp

  • Heavy Cream 1 cup

Pantry

  • Olive Oil 2 Tbsp

Preparation

  1. Season & Cook Tri Tip

    Season beef on sheet pan. Place the tri-tip on the middle oven rack. Start to cook Tri-Tip.

    • 2 1/4 lb Beef Tri-Tip Roast
    • 1 Tbsp Olive Oil
    • 1 tsp Kosher Salt
    • 1 pinch Black Pepper
  2. Prep Mashed Potatoes

    Prepare potatoes. Place potatoes into a large pot, cover with water, season with salt, and bring to a boil. Reduce heat to medium-high, and cook potatoes for 20 mins.

    • 1 1/2 lb, quartered Baby Yukon Gold Potato
    • 6 cups Water
    • 2 tsp Kosher Salt
  3. Cook Green Beans

    Trim green beans and arrange on a baking tray. Drizzle green beans with olive oil and season. Once the tri-tip's first cook sequence is up, place the green beans on a rack below the tri-tip and start the next cook sequence.

    • 1 pinch Black Pepper
    • 1 tsp Kosher Salt
    • 1 Tbsp, extra virgin Olive Oil
    • 1 lb, trimmed Fresh Green Beans
  4. Season & Mash Potatoes

    Strain potatoes in sink. Place back in same pot. Mash all ingredients together. Cover to keep warm.

    • 4, minced Garlic Cloves
    • 1 Tbsp Unsalted Butter
    • 1 cup Heavy Cream
    • 2 Tbsp Fresh Horseradish
  5. Sauce Creation

    Heat Maple Onion sauce on medium low. Add ingredients and cook for 5 minutes stirring occasionally. Remove from heat and set aside.

    • 1 cup Onion Maple Confit
    • 1/4 bunch, leaves removed Fresh Thyme
    • 2, minced Garlic Cloves
  6. Serve & Enjoy!

    Let tri-tip rest then slice into 1/4" thick slices and top with onion maple sauce. Serve with green beans & horseradish mashed potatoes.
